Das Fleisch aus dem Topf heben, ein St\u00fcck Butter in den Topf, die in W\u00fcrfel geschnittenen Zwiebel und Karotten zugeben und anr\u00f6sten, die Pilze zugeben und mitr\u00f6sten ohne Farbe nehmen zu lassen.<\/p>\n\n\n\n<p class=\"has-text-align-left\">Mit Verjus abl\u00f6schen, mit H\u00fchnerfond oder Wasser aufgie\u00dfen, sobald es kocht die H\u00fchnerkeulen einlegen, zudecken und bei schwacher Hitze k\u00f6cheln lassen. Nach etwa einer Stunde sollten die Keulen weich sein. Aus der Sauce nehmen und warm halten. Das Mehl mit dem Schlagobers glatt r\u00fchren und z\u00fcgig in die Sauce mit einem Schneebesen einr\u00fchren, damit keine Kl\u00fcmpchen entstehen.
